Most of the plugs I use are low enough latency to be able to run live. Plugin wise I'm not so use to burning in to the recording. I generally add a bit of compression and maybe EQ on the way in via hardware. My attempt it to choose the sounds and timbres as we go, the voicing, arrangement and sonically add some spice and trim some fat. Personally I like to get the record coming along. The ethos is still good for today but we all know the advantages of digital too and being able to change something after the fact when clearly one got a little exited with turning the knobs! I come from the old school of limited resources and committing to tape. If you track all clean and say you'll "decide" later, then how can the previous part inspire the next part if its mojo isn't there? And then the next overdub is a reaction to the previous one.
It's a workflow that is partly responsible for the way all those older records we all love sound, namely get part of (if not all) of the sonics on the way in and while the artist can be inspired by it and react to it. Tracking through their Unison preamps is a MAJOR draw to their system that cannot be done natively.
